These melt-in-your-mouth tender beef tips with the most amazing, rich, gravy never fail to impress everyone around the table! It is a very comforting dish perfect to pair with potatoes, pasta, or rice.
INGREDIENTS
BEEF TIPS:
1 1/2 lb beef chuck roast or sirloin, trimmed of excess fat, cut into large bite-size pieces
1 tbsp vegetable oil
1 onion, chopped (swap with 1 tsp onion powder, if desired)
4-6 garlic cloves, minced (swap with 1 tsp garlic powder, if desired)
1 tsp salt
1/2 tsp pepper
GRAVY:
1 tbsp low sodium soy sauce
1-4 tbsp unsalted butter
1/2 c. all-purpose flour
1 tsp Dijon mustard
1 1/2 tsp beef bouillon
4 c. low sodium beef broth
1/4 teaspoon EACH dried oregano, dried thyme
½ teaspoon EACH dried parsley, paprika
HOW TO MAKE SLOW COOKER BEEF TIPS AND GRAVY
Step 1: Sprinkle the meat with 1 tsp salt and half tsp pepper.
Step 2: In a large skillet, heat 1 tbsp vegetable oil over medium-high heat. To the hot oil, add the beef and sear for approximately 2 minutes on each side. If needed, sear the beef in two batches. When done, transfer the seared beef to a lightly greased 6-quart or larger slow cooker. On top, add the onions and garlic.
Step 3: Melt 1 to 4 tbsp butter into the rest of the juices in the skillet. Note that the portion of butter depends on how much juices/fat are left in the skillet from searing the meat. You should have about half a cup between the juices and butter. Then, stir in the flour and cook for about 2 minutes on medium heat.
Step 4: To the skillet, stir in the rest of the gravy ingredients. Bring the mixture to a boil, then decrease the heat to a simmer until it has thickened to a gravy consistency. Pour in the gravy to the slow cooker and whisk well to combine.
Step 5: Set to cook the beef for 3 to 4 hours on high or 5 to 7 hours on low until the beef is melt-in-your-mouth-tender. To taste, season with more salt and pepper.
Step 6: Serve this slow cooker beef tips with gravy immediately with potatoes, pasta or rice. Enjoy!
