Beef Tips and Gravy is a must at home! Extremely satisfying, rich, and wonderful dish perfect even on busy days. It’s another one of my favourite and go-to slow cooker recipes that guarantee a melt-in-your-mouth beef with luxurious, rich flavours!

BEEF TIPS:
1 tbsp vegetable oil
1 1/2 lbs beef chuck roast or sirloin, trimmed of excess fat, cut into large bite-size pieces
1 tsp salt
1/2 tsp pepper
1 onion, chopped (may sub 1 tsp onion powder)
4-6 garlic cloves, minced (may sub 1 tsp garlic powder)
GRAVY:
1-4 tbsp unsalted butter (in directions)
1/2 c. all-purpose flour
4 c. low sodium beef broth
1 tbsp low sodium soy sauce
1 tsp Dijon mustard
1 1/2 tsp beef bouillon
½ teaspoon EACH dried parsley, paprika
1/4 teaspoon EACH dried oregano, dried thyme
HOW TO MAKE SLOW COOKER BEEF TIPS AND GRAVY
Step 1: Place the meat and sprinkle with a tsp salt and half tsp pepper on a cutting board. Toss to coat. Meanwhile, in a large skillet, heat a tbsp vegetable oil over medium-high heat. Once the oil is hot, add the beef to the skillet and sear for approximately 2 minutes on each side. If needed, you can work in 2 batches. Then, to a lightly greased 6-quart or larger slow cooker, transfer the seared beef and top with onions and garlic.
Step 2: Melt 1 to 4 tbsp butter to the rest of the juices left in the skillet. Note that the amount of the butter depends on how much juice/fat is left from cooking the meat. Make sure to have about half a cup of juice and butter. Then, add in the flour and cook, whisking for about 2 minutes over medium heat.
Step 3: Add the rest of the Gravy ingredients to the skillet and bring the mixture to a boil. Once boiling, decrease the heat and simmer until the gravy has thickened. Then, pour the gravy into the slow cooker and stir to mix.
Step 4: Set the slow cooker on high for 3 to 4 hours or 5 to 7 hours on low until the beef is melt-in-your-mouth tender. To taste, season with additional salt and pepper.
Step 5: Serve the Beef Tips and Gravy with potatoes, pasta, or rice. Enjoy!
