Beef Tips:
1 tbsp Vegetable oil
1 1/2 lb stew meat, beef chuck or sirloin cut into large bite-size pieces
1 tsp salt
1/2 tsp pepper
1 onion, chopped
4-6 garlic cloves, minced
Gravy:
1-4 tbsp butter(in directions)
1/2 c all-purpose flour
4 c low sodium beef broth
1 tbsp low sodium soy sauce
1 tsp Dijon mustard
1 1/2 tsp beef bouillon
1 1/2 tsp sugar
1/2 teaspoon each dried parsley, paprika
1/4 teaspoon each dried oregano, dried thyme
How to make Slow Cooker Beef Tips and Gravy
Step 1: Season the meat with a tsp salt and half tsp pepper.
Step 2: In a large skillet, heat a tbsp olive oil over medium-high heat.
Step 3: Working in 2 batches, add the beef into the hot oil and sear for about 2 minutes, undisturbed on one side.
Step 4: Stirring, continue to cook the beef until browned but not thoroughly cooked.
Step 5: Once done, transfer the cooked beef to a 6-quart or larger slow cooker and top with garlic and onions.
Step 6: Melt 1 to 4 tbsp butter in the same skillet. Note that the sum of butter to be used depending on how much fat or juices are left in the skillet from searing the beef. Use around half a cup of juices and butter.
Step 7: Add the flour into the melted butter and whisk until completely dissolved.
Step 8: Then, add in the “Gravy” ingredients and bring to a boil. Reducing the heat to simmer until the gravy has thickened.
Step 9: Add the gravy into the slow cooker and stir to incorporate.
Step 10: Cook for 3 to 4 hours on high or 5 to 6 hours on low.
Step 11: To taste, season with salt and pepper.
Step 12: When the beef is fork-tender serve it with potatoes, pasta, and rice. Enjoy!
