Sliced Potato Cake

Enjoy potatoes in a creative, fun way. A uniquely beautiful presentation with goodness in every bite. Serve in slices or put the whole cake on the table. Enjoy!

INGREDIENTS

2 pounds of potatoes

3/4 teaspoon salt

3/4 teaspoon pepper

1 teaspoon dried Italian herbs

3 tablespoons olive oil

1 c shredded Parmesan cheese

How to make Sliced Potato Cake

Step 1: Wash the potatoes. Peel and slice them into thin pieces. I suggest using a mandoline if available.

Step 2: Into a large mixing bowl, place the sliced potatoes. Add in the oil, salt, pepper, and Italian herbs. Gently mix with hands to make sure all the pieces of potato are seasoned.

Step 3: Add the parmesan to the bowl and gently mix.

Step 4: To a large baking sheet, lay parchment paper. Top with a 10 inches Springform Pan without a bottom.

Step 5: Inside, add the potato mixture, spreading the potatoes nicely. When done, remove the Springform Pan ring.

Step 6: Place inside the preheated 375 degrees F oven. Bake for about 50 to 55 minutes or until the potatoes are golden brown and cooked through.

NOTES:

To ensure that the potatoes have the same thickness, I recommend using a mandoline. Alternately, slice them using a knife.

For the potato cake not to stick, use parchment paper. I suggest using an unbleached type.

Adjust the seasoning like salt according to your preference. And in place of dried Italian herbs, use fresh herbs like thyme or rosemary if available.

Arrange the slices of potato carefully. It should be a bit taller in the middle and thinner nearest to the edges. Ensure that no clumps of the potato slices are stuck to each other.
