Oatmeal Chocolate Chip Cookie Bars

Thick, chewy, and delicious oatmeal chocolate chip cookie bars. These tasty treat has been my favorite for years! I love to bring them to potlucks and make a huge batch for parties. These cookie bars have all the amazing flavors of chocolate chip cookies. These are sweet-tooth-satisfying and incredibly easy to whip up. These cookie bars will stay fresh for up to 5 days at room temperature or up to 7 to 10 days when stored in the fridge. You can also freeze these bars for up to 3 months.

Ingredients

2 large eggs

1 c. butter, room temperature

1/2 c. granulated sugar

1 c. light brown sugar, packed

2 tsp vanilla extract

1 tsp baking soda

1 tsp baking powder

1/2 tsp salt

1 1/2 c. all-purpose flour

2 c. chocolate chips, semi-sweet, milk chocolate, or a little of both!

2 c. old-fashioned rolled oats

How to make Oatmeal Chocolate Chip Cookie Bars

Step 1: Prepare the oven. Preheat it to 350 degrees F. Using cooking spray, lightly grease a 9 x 13-inch pan. Alternatively, you can line the pan with parchment paper.

Step 2: Place the butter, brown sugar, and white sugar in a large mixing bowl. Beat until smooth and light. Then, add the eggs, one at a time, beating every after each addition. Lastly, stir in the vanilla.

Step 3: Place the dry ingredients (salt, baking soda, baking powder, flour, and rolled oats) in another bowl. Mix well until blended.

Step 4: To the creamed mixture, add the dry ingredients. Mix well until incorporated, then fold in the chocolate chips.

Step 5: Into the prepared pan, transfer and press the cookie dough. Place in the preheated oven and bake for about 25 to 30 minutes or until the top of the bar is golden brown. Remove from the oven when done and let it cool fully.

Step 6: Cut into squares. Enjoy!

Note:

You can freeze these cookie bars. Let the bar cool completely before cutting into squares. In a freezer-safe container or ziplock bag, keep the cookie bars and store them in the freezer for up to 3 months.
