Bread:
2 large eggs
2 c. buttermilk
2 c. granulated sugar
1 c. (2 sticks) Challenge butter, softened
2 tsp vanilla extract
2 tsp baking soda
4 c. all-purpose flour
Topping:
2 tsp ground cinnamon
⅔ c. of granulated sugar
How to make Amish Cinnamon Bread
Step 1: Prepare the oven. Preheat it to 350 degrees F. Ready two loaf pans. Grease and set aside.
Step 2: In a small bowl, place the butter, sugar, eggs, and vanilla. Beat using a handheld mixture. Then, add the buttermilk along with the flour and baking soda. With a rubber spatula, mix everything until well blended.
Step 3: In a small bowl, whisk the cinnamon-sugar ingredients until well mixed.
Step 4: Between the prepared loaf pans, divide half of the batter and evenly sprinkle with 3/4 of the cinnamon-sugar mixture. On top, spread the rest of the batter and sprinkle with the remaining cinnamon sugar. Through each batter, cut a couple of curl marks.
Step 5: Place in the preheated oven for about 45 minutes or until a toothpick inserted in the middle of the bread comes out clean. Remove from the oven when done and let the bread cool for about 20 minutes, then invert on the wire racks to cool completely.
Tips:
Wrap any leftovers in aluminium foil and store them in the freezer for up to 6 months.
