I have to admit this Sicilian Meatloaf surpassed all my expectations! It’s so easy to make, and it is freaking delicious. Perfect for the entire family and impressive to serve if you have guests coming over.

2 Eggs
1 tablespoon olive oil
1 small red onion, finely chopped
1 red bell pepper, finely chopped
2 cloves garlic, minced
2 pounds ground beef
1/2 cup Parmesan cheese
2 tablespoons tomato paste
12-15 large basil leaves
2 tablespoons parsley, chopped
about 1/4 pound deli ham
3/4 cup Italian style breadcrumbs
1 1/4 c. either shredded mozzarella cheese
marinara sauce
cooked pasta or zucchini noodles, if desired
1 teaspoon salt
1/2 teaspoon pepper
How to make Sicilian Meatloaf
Step 1: Prepare the oven. Preheat it to 350 degrees.
Step 2: In a medium skillet, heat the olive oil over medium heat. Once the oil is hot, add the onion and red pepper to the skillet, then saute for approximately 5 minutes or until the onions are clear. Now, add the garlic and continue to cook until aromatic.
Step 3: Take the skillet off the heat and let it cool for a bit.
Step 4: Add the ground beef, bread crumbs, Parmesan, eggs, tomato paste, salt, pepper, parsley, and vegetable mixture in a large mixing bowl. Mix using your hands until well blended.
Step 5: Layout a large sheet of parchment paper on the counter. In the middle, place the meat mixture, then pat it out to make an 8 x 15-inch rectangle shape, then top with a layer of ham followed by a layer of basil and cheese. Make sure to leave about an inch of space all around the border.
Step 6: Roll the meatloaf beginning at the 8-inch end ( like you are rolling a jelly) with the parchment paper guiding you. To seal, press down on the seam.
Step 7: On a baking sheet lined with parchment paper, place the meatloaf. Bake it in the preheated oven for about an hour.
Step 8: When done, remove the meatloaf from the oven and let it rest for about 10 minutes before carving.
Step 9: Slice and serve the meatloaf with pasta or zucchini noodles, then top with marinara sauce. Enjoy!
