1 tablespoon olive oil
1 red bell pepper, finely chopped
1 small red onion, finely chopped
2 cloves garlic, minced
2 pounds ground beef
3/4 c. Italian style breadcrumbs
1/2 c. Parmesan cheese
2 Eggs
2 tablespoons tomato paste
1 teaspoon salt
1/2 teaspoon pepper
2 tablespoons parsley, chopped
about 1/4 pound deli ham
12-15 large basil leaves
1 1/4 c. either shredded mozzarella cheese
marinara sauce
cooked pasta or zucchini noodles, if desired
How to make Sicilian Meatloaf
Step 1: Prepare the oven. Preheat it to 350 degrees.
Step 2: In a medium skillet, heat the olive oil over medium heat. Add the onion and red pepper to the hot oil and saute for approximately 5 minutes until the onions are translucent. Add in the garlic and continue to cook until aromatic. Then, take away from the heat and let it cool a little.
Step 3: Add the ground beef, bread crumbs, Parmesan, eggs, tomato paste, salt, pepper, parsley, and vegetable mixture in a large mixing bowl. Mix using your hands until well mixed.
Step 4: Lay a large sheet of parchment paper on the counter. In the middle, place the meat mixture and pat it out to make about 8 x 15-inch rectangle. Top it with a layer of ham followed by a layer of basil and cheese, making sure to leave about an inch border around the ham.
Step 5: Roll the meatloaf up beginning at the 8-inch end like a jelly roll with the parchment paper guiding you. To seal, press the seam down and the ends. Transfer the rolled meatloaf to a baking sheet lined with parchment paper.
Step 6: Place in the preheated oven and bake for about an hour. When done, remove from the oven and let the meatloaf rest for at least 10 minutes.
Step 7: Slice and serve over pasta or zucchini noodles and with marinara sauce if desired. Enjoy!
