Shrimp Scampi Roll-Ups

PREP TIME: 10 MINS | TOTAL TIME: 40 MINS | YIELDS: 6

These roll-ups are the best thing ever! Easy to prep with a few simple ingredients and ready in just under an hour. The melty cheese, flavorful filling, and luscious sauce just stole my heart in a beat!

INGREDIENTS

3 tablespoons butter

4 cloves garlic, minced

3 tablespoons all-purpose flour

2 1/2 cups whole milk

1/4 cup freshly chopped parsley, plus more for garnish

pinch of crushed red pepper flakes

1/2 cup dry white wine

1 3/4 cup shredded mozzarella, divided

1/2 cup freshly grated Parmesan

kosher salt

Freshly ground black pepper

1 pound large shrimp, peeled and deveined, roughly chopped

Juice of 1 lemon

10 cooked lasagna noodles

2 cups ricotta

How to make Shrimp Scampi Roll-Ups

Step 1: Prepare the oven. Preheat it to 350 degrees.

Step 2: Melt the butter in a large skillet over medium heat. Once the butter has melted, add the garlic to the skillet and cook for about a minute until aromatic. Add in the flour and whisk to combine. Cook for another minute until golden.

Step 3: Pour in the milk and add in the parsley and a pinch of red pepper flakes. Allow the mixture to thicken. This takes about 2 to 3 minutes. Then, pour in the wine followed by the half cup mozzarella and Parmesan. To taste, season with salt and pepper. Now, add in the shrimp and continue to cook for another 2 minutes until pink. Add in the lemon juice and stir.

Step 4: Lay the cooked lasagna noodles on a large baking sheet. And in another large baking or casserole dish, spread a thin layer of sauce. With a layer of ricotta, spread each noodle and top with a thin layer of scampi mixture. Roll the noodle up. Place the rolled noodle onto the sauce and spoon extra sauce over the roll-ups, then sprinkle with the rest of the 3/4 cup mozzarella.

Step 5: Place in the preheated oven and bake for about 20 minutes until golden and melty. Turn the oven to broil for about 2 minutes until the tops of the roll-ups look golden.

Step 6: Before serving, garnish the roll-ups with parsley. Enjoy!
