Shrimp Quesadillas

Hey, shrimp lovers out there! Dress your favourite shrimp in another wonderful way with this crowd-pleasing and seriously delicious shrimp quesadillas. It is an easy and quick Shrimp Quesadillas recipe with a combination of spicy shrimp, sauteed onions & bell peppers, garlic, and gooey cheese all wrapped in crispy tortillas. Pair these with sour cream, salsa, or guacamole for extra goodness!

Ingredients

1 tbsp olive oil

1 lb uncooked medium shrimp peeled and deveined

6-8 Medium flour tortillas

1/2 c. onion chopped

2 cloves garlic minced

1/2 c. bell pepper chopped

2 tbsp or 1 tablespoon chilli powder and 1/2 tsp EACH garlic powder, onion powder, dried oregano, paprika, ground cumin,

salt, black pepper

1-2 c. melting cheese mozzarella, cheddar, Mexican blend, or Monterey Jack

How to make Shrimp Quesadillas

Step 1: In a large skillet or pan, heat a tbsp oil. To the hot oil, add the chopped onion, bell pepper, and garlic. Cook for about a minute or until soft.

Step 2: To the pan, add the shrimp and taco seasoning. Continue to cook for an additional minute or two or until the shrimp starts to turn pink.

Step 3: To a bowl, transfer the mixture. Rinse and pat dry the pan using a paper towel. Put the pan back to the heat and spray with cooking spray or drizzle with about a tsp vegetable oil.

Step 4: In the pan, lay the tortilla and sprinkle the cheese on one side. On the tortilla, spoon enough (around) 5 to 6 shrimp and sprinkle with more cheese. In half, fold the tortilla. Cook the quesadillas for about 2 to 3 minutes per side, or until golden and crispy. Do this for the rest of the tortillas.

Step 5: Serve the Shrimp Quesadillas right away with sour cream, salsa, or guacamole. Enjoy!
