This baked goodness has complete layers of tasty ground beef, veggies, and homemade mashed potatoes. It’s a simple pie that is incredibly easy to whip up. It’s a classic comfort food perfect if you are craving a hearty dinner.
Ingredients
Mashed potato topping:
2 pounds potatoes peeled and cut into big chunks
4 tablespoons butter half a stick
1/4 c. sour cream
¼ to 1/2 c. milk
salt and pepper to taste
Filling:
1 pound ground beef
1 small onion diced
2 cloves garlic minced
2 c. frozen peas, carrots, and corn medley
2 tablespoons flour
1/2 c. beef broth
1 tablespoon tomato paste
1 tablespoon Worcestershire sauce
1 teaspoon rosemary
1/2 teaspoon thyme
1 bay leaf
How to make Shepherd’s Pie
Step 1: Prepare the oven. Preheat it to 350 degrees.
Step 2: Cook the potatoes in boiling water until fork-tender. Drain the water when done.
Step 3: To the potatoes, add the butter, sour cream, milk, salt, and pepper. Using a hand masher or mixer, mash the potatoes until your desired consistency. Set aside when done.
Step 4: Cook the ground beef with onions and garlic in a large skillet until the meat is browned. When done, drain the excess grease.
Step 5: Add 2 cups of the frozen vegetables to the same skillet and cook for approximately 5 to 7 minutes, stirring often. Over the meat, sprinkle the flour and mix. Now, pour in the beef broth and Worcestershire sauce. Add the rosemary, thyme, and bay leaf.
Step 6: Bring the mixture to a simmer, then adjust the heat to low. Continue cooking for another 10 minutes, uncovered, adding in the extra broth if needed.
Step 7: When done, remove from the heat. Then, in a greased 9 x 13-inc dish, pour the meat mixture, then spread in an even layer. Before adding the mixture to the dish, ensure to remove the bay leaf first.
Step 8: Make an even layer of the mashed potatoes on top of the meat. You can get creative and easily make designs and ridges in the potatoes if desired. Then, bake the pie in the preheated oven for about 30 minutes until brown and bubbly. If you want to further brown the potatoes, set the oven to broil for a couple of minutes.
