SHEET PAN CHICKEN FAJITAS

Prep Time: 5 minutes | Cook Time: 25 minutes | Total Time: 30 minutes | Servings: 8

Flavorful, healthy, and ready in thirty minutes! This incredible Sheet Pan Chicken Fajitas is a must and to keep.

Ingredients

Spice Mixture:

3 tsp chilli powder

1 1/2 tsp ground cumin

1 tsp coriander

1 tsp paprika

dash of red chilli pepper (optional)

salt and pepper

Fajitas:

1 1/2 pounds boneless skinless chicken breast (sliced into thin strips (thighs will also work))

1 red pepper

1 green pepper

1 yellow pepper

1 onion (sliced)

2 cloves garlic

3 tbsp olive oil

2 tsp fresh lime juice

3 tbsp chopped cilantro (optional)

8 corn tortillas

optional toppings: sour cream (salsa, avocado, and cheese)

HOW TO MAKE SHEET PAN CHICKEN FAJITAS

Step 1: Prepare the oven. Preheat it to 400 degrees.

Step 2: In a small bowl, mix the spice mixture ingredients and set aside.

Step 3: On a baking sheet, add the sliced peppers and onions and top with sliced chicken.

Step 4: Sprinkle on top of the chicken the spice mixture and garlic.

Step 5: Drizzle with olive oil and mix.

Step 6: Evenly spread everything on the pan.

Step 7: Place inside the preheated oven and roast for about 20 to 25 minutes. Turning once halfway through.

Step 8: In the last 5 minutes of cooking, add the tortillas wrapped in foil.

Step 9: Remove from the oven and drizzle with lime juice. Mix well.

Step 10: Garnish with cilantro and serve in tortillas with your desired toppings.

Notes:

Add a bit of red chilli pepper or top with jalapeno for extra spice.

Use either chicken breasts or thighs.

Make sure that the chicken is cooked through and the internal temperature reached 165 degrees F.

Use this exact recipe to make steak or shrimp.

Makes an excellent leftover lunch.
