SESAME CHICKEN SALAD

Crunchy, sweet, creamy, and full of flavour – this Sesame Chicken Salad is perfect in every way! Tossed in a delicious sesame vinaigrette, I promise you’ll fall hard for this simple yet delicious salad!

If you love a salad as I do, then you’ll adore this salad, too. It is super simple, easy, and quick to make not mention tasty! It has all the right textures, flavours that you can never say no to. This surely is a must-try, must-have, and to die for!

My mom introduced me to this, she said I will enjoy every piece of it. And she’s right! It was like love at first bite. I have been making this salad ever since.

INGREDIENTS

SALAD:

1 (14-oz) bag coleslaw (or 7 c shredded cabbage)

2 c diced or shredded cooked chicken

1 c loosely-packed chopped cilantro

2/3 c sliced green onions

2/3 c sliced or slivered almonds, toasted

1/2 c shredded carrots1 avocado, peeled, pitted and diced

toasted sesame seeds, for sprinkling

SESAME VINAIGRETTE:

2 tbsp avocado oil (or olive oil)

2 tbsp rice vinegar

1 tbsp low-sodium soy sauce (or Tamari)

1 tbsp maple syrup or honey

1 tsp toasted sesame oil

1/2 tsp ground ginger

1 small garlic clove, pressed or minced (or 1/4 tsp garlic powder)

a few twists of freshly-cracked black pepper

HOW TO MAKE SESAME CHICKEN SALAD

To make the vinaigrette:

Step 1: Whisk the vinaigrette ingredients in a small bowl and mix until well combined. Or into a mason jar and shake to combine.

To prepare the salad:

Step 2: In a large mixing bowl, combine the coleslaw, chicken, cilantro, green onions, almonds, carrots and avocado.

Step 3: Drizzle over the vinaigrette and toss until incorporated.

Step 4: Garnish with sesame seeds and serve immediately. Enjoy!
