My mom introduced me to this, she said I will enjoy every piece of it. And she’s right! It was like love at first bite. I have been making this salad ever since.
INGREDIENTS
SALAD:
1 (14-oz) bag coleslaw (or 7 c shredded cabbage)
2 c diced or shredded cooked chicken
1 c loosely-packed chopped cilantro
2/3 c sliced green onions
2/3 c sliced or slivered almonds, toasted
1/2 c shredded carrots1 avocado, peeled, pitted and diced
toasted sesame seeds, for sprinkling
SESAME VINAIGRETTE:
2 tbsp avocado oil (or olive oil)
2 tbsp rice vinegar
1 tbsp low-sodium soy sauce (or Tamari)
1 tbsp maple syrup or honey
1 tsp toasted sesame oil
1/2 tsp ground ginger
1 small garlic clove, pressed or minced (or 1/4 tsp garlic powder)
a few twists of freshly-cracked black pepper
HOW TO MAKE SESAME CHICKEN SALAD
To make the vinaigrette:
Step 1: Whisk the vinaigrette ingredients in a small bowl and mix until well combined. Or into a mason jar and shake to combine.
To prepare the salad:
Step 2: In a large mixing bowl, combine the coleslaw, chicken, cilantro, green onions, almonds, carrots and avocado.
Step 3: Drizzle over the vinaigrette and toss until incorporated.
Step 4: Garnish with sesame seeds and serve immediately. Enjoy!
