Well, this recipe is just the one you need to try if you are a huge fan of potatoes. I am sure that you are gonna be baking this all the time once you get a bite of it. 2 pounds new yellow potatoes, halved

3 sprigs fresh rosemary
3 cloves garlic, whole, peeled, bruised
2 bay leaves
2 tablespoons salt
2 tablespoons olive oil
1 pinch cayenne pepper
1 pinch kosher salt
HOW TO MAKE THE CRISPIEST ROASTED POTATOES
Step 1: Pour water in a large pot and add in the potatoes.
Step 2: Use the dull side of the knife to bruise the rosemary and add into the pot.
Step 3: Add in the bay leaves, garlic, and salt. Bring to a boil and simmer for at least 5 minutes.
Step 4: Remove the potatoes and allow it to dry.
Step 5: Ready the oven and preheat to 375 degrees F or 190 degrees C.
Step 6: Put the dried potatoes back into the pot and drizzle it with olive oil, pinch of salt, and cayenne pepper. Stir until the potatoes are well coated.
Step 7: Transfer the seasoned potatoes into a sheet pan with rims.
Step 8: Place inside the preheated oven and bake for 35 to 40 minutes or until the potatoes become golden brown. Check if the inside is soft as well.
Step 9: Remove from the oven and let it sit on a wire rack to cool for at least 5 minutes.
Step 10: Serve and enjoy!
NOTES:
No need to peel the potatoes before roasting. The taste of the skin is a plus in flavor!
If you are using small potatoes, poke them a little with a fork so there will be small holes where steam can go out.
