A fantastic, no-fuss recipe that reminds me of home. My mom used to make this for me when I was little. And now that I have kids of my own it became almost like a tradition to make this delicious Potato Pie on the weekend. With just four ingredients and fifteen minutes of prep time, anyone can throw this together in a heartbeat!
Every bite of this simple potato dish with bacon and cheese is like going back years before. Reminding us of the simplicity of life, the hardship, laughter, family, and home before all these. Ingredients
2 lbs red potatoes
1 tbsp butter, melted
1/2 lb bacon
4 oz grated Gruyere cheese
salt and pepper (to taste)
How to make Scottish Potato Pie
Step 1: Prepare the oven. Preheat it to 425 degrees.
Step 2: Use butter to grease a 9-inch pie dish.
Step 3: On the bottom and sides of the prepared dish, arrange the slices of bacon, making sure that some of the slices slightly overhang the edges.
Step 4: Peel the potatoes and slice thinly.
Step 5: Rinse and pat dry the potatoes.
Step 6: Over the bacon, place 1/3 of the potato slices.
Step 7: And sprinkle with 1/3 cheese and season with salt and pepper to taste.
Step 8: Do the same layers twice.
Step 9: On top, fold the overhanging bacon.
Step 10: Bake in the preheated oven for about 50 minutes until the potatoes are tender. Using a fork to pierce the potatoes to know that they are done.
Step 11: Remove from the oven and allow the pie to rest for at least 2 minutes.
Step 12: Slice and serve. Enjoy!
