INGREDIENTS

2 whole eggs, slightly beaten

1 pound hot Italian sausage

8 oz. manicotti

1 1⁄2 c. shredded provolone cheese

1 1⁄2 c. shredded mozzarella cheese

1⁄3 c. Italian seasoned breadcrumbs

1⁄4 c. freshly grated Parmesan cheese

2 c. spaghetti sauce (your favourite or homemade)

How to make sausage-stuffed manicotti recipe

Step 1: Cook the manicotti for about 8 minutes. When done, drain and set aside.

Step 2: In the meantime, cook the Italian sausage in a large skillet over medium-high heat until cooked through. When done, drain the excess grease, then let the sausage cool for a bit.

Step 3: Mix the sausage with 1 cup each mozzarella and provolone, breadcrumbs, and eggs until well combined. Start stuffing the manicotti shells with it.

Step 4: On the bottom of a 9 x 13-inch baking dish, spread a thin layer of the pasta sauce. In a single layer, arrange the stuffed manicotti on top of the sauce. Then, add the rest of the spaghetti sauce over the stuffed manicotti.

Step 5: Tent using foil and place in a 375 degrees F preheated oven. Bake for approximately 25 minutes. Then, remove the cover and continue to bake for an additional 5 to 10 minutes or until the cheese has melted and bubbly.
