Sausage Egg and Cheese Stuffed Biscuits

Make mornings less hectic with these easy and quick breakfast stuffed biscuits. This delicious make-ahead brekkie will keep you full for the entire day. Grab-and-go or enjoy with a cup of freshly brewed coffee on a Sunday morning.

Ingredients

Biscuits

2 cups all-purpose flour

1 tablespoon baking powder

1 teaspoon kosher salt

1 stick unsalted butter, cubed

1 cup shredded cheddar cheese, divided

1 tablespoon chives, minced

3/4 cup buttermilk

Sausage, Egg, Cheese Filling

1 cup shredded cheddar cheese, divided

8 breakfast sausage patties, fully cooked

6 eggs, scrambled

How to make Sausage Egg and Cheese Stuffed Biscuits

To make the Biscuits:

Step 1: Prepare the oven. Preheat it to 350 degrees.

Step 2: Add the flour, baking powder, and salt in a food processor. Pulse various times until incorporated before adding in the butter, cheddar cheese, and chives. Pulse some more until the mixture compares to coarse crumbs.

Step 3: Gradually add the buttermilk into the flour mixture. Pulse several times until it forms a soft dough.

Step 4: On a lightly floured surface, knead the dough until no longer sticky. Roll to about half-inch thick and cut using a floured biscuit cutter.

Step 5: To make around 4-inches wide of dough, gently flatten and spread together 2 pieces of dough.

To prepare the Sausage, Egg, Cheese Filling:

Step 1: Layer a large pinch of cheese on the dough followed by 1 sausage patty, and around 2 tbsp of scrambled eggs. And top it all up with a piece of dough. Seal by pinching the sides. Transfer it to a parchment paper-lined baking sheet.

Step 2: Do the same with the rest of the ingredients to make 8 rolls.

Step 3: Place inside the preheated oven and bake for about 15 to 20 minutes or until golden brown.

Step 4: Remove from the oven and serve immediately or place in a fridge for up to a week.
