Easy to make sweet and salty bite-sized cracker bites. Tastes incredible, buttery, crunchy bites that you’ll never stop popping in your mouth! If you like some heat, mix in a bit of cayenne pepper, or for additional sweetness and crunch, dust these cracker bites with cinnamon and sugar.

4 c. oyster crackers
3/4 c. butter
3/4 c. brown sugar
2 tsp vanilla paste or extract
1 tsp kosher salt
How to make Salted Caramel Cracker Bites
Step 1: Prepare the oven. Preheat it to 350 degrees.
Step 2: Using parchment paper or aluminium foil, line a baking sheet and lightly grease with non-stick cooking spray.
Step 3: In an even layer, spread the crackers on the prepared baking sheet.
Step 4: Melt the butter in a large pan over medium heat. Add in the brown sugar and vanilla once the butter has melted and stir until the sugar has dissolved.
Step 5: Once the mixture starts to boil, turn the heat up and continuously stir for approximately 3 to 4 minutes while the mixture gets bubbly and lighter.
Step 6: Turn the heat off and quickly pour the mixture over the crackers. Using a rubber spatula, gently mix until the crackers are evenly coated. Then, sprinkle with kosher salt.
Step 7: Place in the preheated oven and bake for about 8 to 10 minutes. Remember to keep an eye to prevent it from burning.
Step 8: When done, remove from the oven and let the crackers cool before breaking into pieces. You can serve them immediately or place them in an airtight container.
Variations:
Mix 3 tablespoons of granulated sugar with 1 1/2 teaspoons of cinnamon, then sprinkle on top of the crackers after baking.
If you prefer some kick, add a pinch of spice like cayenne pepper.

For this recipe, I used Nabisco Premium Oyster Crackers because these are bigger than the store brands.
Instead of extract, I suggest using vanilla paste because of the flavour and amazing aroma.
