2 large eggs
1 c. unsalted butter, softened
2 c. semisweet chocolate chips
1/2 c. granulated sugar
1 c. packed light brown sugar
1 tsp baking soda
1 tsp kosher salt
2 1/2 c. all-purpose flour
10 oz. soft caramels, unwrapped
14 oz. sweetened condensed milk
1 tsp flaked sea salt
1 tsp vanilla extract
How to make Salted Caramel Chocolate Chip Cookie Bars
Step 1: Prepare the oven. Preheat it to 350 degrees F. Using a foil, line a 9 x 13-inch baking dish and generously grease with nonstick cooking spray.
Step 2: Beat the softened butter with both sugars in the bowl of an electric mixer for about 2 minutes or until light and fluffy. Then, add the eggs followed by the vanilla, salt, and baking soda. Mix well. Using a spatula, scrape the sides of the bowl.
Step 3: Adjust the speed to low, then add the flour. Continue beating until blended, then fold in the chocolate chips.
Step 4: Into the bottom of the prepared baking dish, press half of the cookie dough.
Step 5: Add the sweetened condensed milk and unwrapped caramels in a medium saucepot. Heat over medium-low heat, stirring to melt the caramels. Once the filling is smooth, pout this over the cookie dough base.
Step 6: Over the caramel filling, drop the rest of the cookie dough in small teaspoon-sized clumps. Place in the preheated oven and bake for about 25 to 30 minutes or until the middle of the bar is just set.
Step 7: Remove from the oven when done and sprinkle the bars with sea salt. Let the bars cool fully before lifting them out of the pan by the edges of the foil. Slice into bars and keep them in an airtight container for up to 3 days at room temperature.
