I love easy and quick recipes. They are life and game-changer! I have my favourites and go-to and this pasta dish is worth everything! This has chunks of tender salmon and spinach smothered in a very delicious creamy Parmesan sauce!
This salmon pasta with spinach is my husband’s favourite. I always whip this up whenever he feels like eating pasta and salmon. I throw this together in a single pan using only a few simple ingredients in thirty minutes! You are welcome to use any of your favourite pasta. Although, I do not suggest using very small pasta. I am making this salmon pasta with spinach again tonight for our simple impromptu date night.
INGREDIENTS
3 tablespoons butter
8 ounces uncooked pasta I use campanelle
1 pound salmon skinless and boneless (one piece or multiple pieces)
1 medium onion chopped
1 c. Parmesan cheese grated
1 c. heavy cream
2 garlic cloves minced
6 ounces baby spinach
salt and pepper to taste
2 tablespoons parsley chopped
HOW TO MAKE SALMON PASTA WITH SPINACH
Step 1: Following the package directions, cook the pasta.
Step 2: In the meantime, saute the onion in butter for about 4 to 5 minutes over medium heat. Then, add the salmon and continue to cook for an additional 5 to 7 minutes, breaking the salmon into flakes as it cooks.
Step 3: To the pan, add the spinach and cook further until wilted. This takes another minute or two.
Step 4: Stir in the heavy cream, Parmesan, garlic, salt, and pepper until well incorporated. Bring everything to a gentle simmer.
Step 5: Drain the pasta and add it to the pan along with the chopped parsley. Toss well.
Step 6: When done, take the pan off the heat and serve the salmon pasta with spinach garnished with some parsley and grated Parmesan. Enjoy!
