Loaded with chunks of tender salmon and spinach, this delicious, super easy-to-make pasta in a creamy Parmesan sauce is my new go-to. I found this recipe on Pinterest. I saw it a couple of times before I decided to give this a try. Not that I don’t like it but maybe because of my picky eaters. But to tell you the truth, we love salmon! So I know at the back of my mind that my kids will love this. And I was right! They adore this Salmon Pasta with Spinach so much, this has to be in our favourite meal rotation! With a few simple ingredients, minimal effort this dish anyone can throw together in no more than thirty minutes! A scrumptious one-pot meal that you should not miss!

1 pound salmon skinless and boneless – one piece or multiple pieces
8 ounces uncooked pasta (I used campanelle)
3 tablespoons butter
1 medium onion chopped
6 ounces baby spinach
1 c. heavy cream
1 c. Parmesan cheese grated
2 garlic cloves minced
2 tablespoons parsley chopped
salt and pepper to taste
HOW TO MAKE SALMON PASTA WITH SPINACH
Step 1: Following the package directions, cook the pasta. In the meantime, saute the onion in butter for about 4 to 5 minutes over medium heat.
Step 2: To the onion, add the salmon and continue to cook for 5 to 7 minutes more while breaking the salmon into flakes as it cooks. Now add in the spinach and cook for another minute or two until wilted.
Step 3: Then, stir in the heavy cream, Parmesan, garlic, salt, and pepper. Bring the mixture to a gentle simmer.
Step 4: To the mixture, add in the cooked pasta along with the chopped parsley, then mix to incorporate everything.
Step 5: Before serving, garnish with parsley and grated Parmesan. Enjoy!
