SALMON PASTA WITH SPINACH

This one-pot salmon dish is the perfect easy and quick dinner meal that your whole family will enjoy. One bite and you’ll be obsessed with this Salmon Pasta with chunks of tender salmon and spinach in a creamy Parmesan sauce. A not fussy, super simple dish that is ready in under thirty minutes. Try this tonight and you’ll see.

INGREDIENTS

1 pound salmon skinless and boneless – one piece or multiple pieces

8 ounces uncooked pasta (or campanile)

3 tablespoons butter

1 medium onion chopped

6 ounces baby spinach

1 c heavy cream

1 c Parmesan cheese grated

2 garlic cloves minced

2 tablespoons parsley chopped

salt and pepper to taste

HOW TO MAKE SALMON PASTA WITH SPINACH

Step 1: Prepare the pasta following the package directions.

Step 2: In the meantime, saute the onion in butter for about 4 to 5 minutes over medium heat.

Step 3: Add the salmon into the onion and continue to cook for 5 to 7 minutes more, breaking the salmon into flakes as it cooks.

Step 4: Add in the spinach. Cook for a minute or two until wilted.

Step 5: Stir in the heavy cream, Parmesan, garlic, salt, and pepper and bring the mixture to a gentle simmer.

Step 6: Add the cooked pasta to the rest of the ingredients followed by the chopped parsley. Mix well until incorporated.

Step 7: Before serving, garnish with parsley and grated Parmesan. Enjoy!
