SALMON IN ROASTED PEPPER SAUCE

PREP TIME: 5 mins | COOK TIME: 20 mins | TOTAL TIME: 25 mins | SERVINGS: 2

This super delicious one-pan meal is perfect for a busy weeknight dinner and worthy of a special occasion. A pretty easy meal to prepare that comes out amazing always!

INGREDIENTS

2 salmon fillets skin on (about 1 pound)

Salt and pepper to season

1 tablespoon olive oil

1 tablespoon butter

3 cloves garlic finely diced

4 ounces roasted red peppers diced

4 c. fresh baby spinach

1/2 c. Half & Half or heavy cream

1/4 c. grated Parmesan cheese

1/4 teaspoon red pepper flakes or to taste

1/4 c. chopped parsley

Salt and pepper to taste

HOW TO MAKE SALMON IN ROASTED PEPPER SAUCE

Step 1: With salt and pepper, season the salmon fillets.

Step 2: In a medium non-stick skillet, heat the oil over medium heat. Once the oil is hot, add the salmon fillets to the skillet flesh-side down. Cook for about 5 minutes per side. Remove the cooked salmon fillets from the pan and set them aside.

Step 3: Add the butter and garlic into the same pan and cook for about a minute before adding in the roasted peppers. Continue to cook for another 2 minutes.

Step 4: Into the pan, add the spinach and cook until wilted.

Step 5: Adjust the heat to low, then add in the Half-and-Half, Parmesan, red pepper flakes, parsley, salt, and pepper. Stir well and bring to a simmer.

Step 6: Add the salmon back to the pan and spoon the sauce over the fillets.

Step 7: Enjoy over pasta, rice, or steamed vegetables.
