Enjoy a flavour-packed meal with this amazing weeknight dinner with juicy meatballs served over creamy mashed potatoes with steamed veggies on the side.

Meatballs:
2 tablespoons olive oil
500 grams ground beef
1 tablespoon tomato ketchup
¼ c. breadcrumbs (I used Panko)
1 teaspoon Worcestershire sauce
½ onion, grated
1 garlic, grated
½ teaspoon salt
1 teaspoon grounded black pepper
Gravy:
1 large onion, sliced
2 tablespoons butter
1 garlic, grated
2 tablespoons plain flour
1 tablespoon bbq sauce
1 tablespoon tomato ketchup
1 teaspoon smoked paprika
2 c. beef stock
Salt to taste
½ teaspoon freshly cracked black pepper
Mashed Potatoes:
4 tbsp salted butter
5 large potatoes, peeled and boiled till tender
Salt and black pepper to taste
½ cup milk (I used low-fat milk)
How to make Salisbury Meatballs and Mashed Potatoes
Step 1: In a large bowl, place the meatball ingredients except for the olive oil. Mix well until blended, then form into 1-inch meatballs.
Step 2: To a large skillet, heat the olive oil over medium-high heat. Once the oil is hot, add the meatballs into the skillet and cook both sides. If needed, add more oil. Set the cooked meatballs aside when done.
Step 3: Melt the butter in the same pan. Add the onion to the melted butter and cook until soft and translucent. Then, add 2 tablespoons of flour and grated garlic. Cook for a minute mote.
Step 4: Stir in the beef broth and continue to cook for additional 3 minutes until the sauce has thickened.
Step 5: Add the tomato ketchup, bbq sauce, and paprika. To taste, season with salt and black pepper. Stir well. Add more broth/water if the sauce turned up too thick.
Step 6: Return the meatballs to the pan and toss in the sauce. Continue to cook for a minute more.
Mashed Potatoes:
Step 7: In a big bowl, place the mashed boiled potatoes. Add the milk and butter, then season with salt and pepper.
To Serve:
Step 8: On a plate, place some mashed potatoes, top with meatballs, and gravy. If desired, garnish with some parsley. Serve the meatballs and mashed potatoes with a side of steamed veggies like broccoli. Enjoy!
