Who’s up for roasted sweet potatoes? I know, I am! And with this easy, new roasting technique I’ve learned, I bet I’ll be making these beautiful, golden-brown with caramelized edges potatoes always!
Ingredients
Roasted Sweet Potatoes:
2 tbsp extra virgin olive oil
2 lbs (about 3 medium) sweet potatoes
3/4 tsp kosher salt
1 tbsp honey or pure maple syrup optional
Seasonings of Choice (optional, but I normally keep it simple with black pepper)
1/2 tsp ground cinnamon
1 tsp chilli powder
1/4 tsp chipotle chilli powder
1/4 tsp ground black pepper
How to make Roasted Sweet Potatoes
Step 1: Prepare the oven. Preheat it to 425 degrees F.
Step 2: Using parchment paper or aluminium foil, line a large, rimmed baking sheet.
Step 3: Scrub, then peel the sweet potatoes. If you prefer to just scrub the potatoes, make sure to pat them very dry. Then, trim the ends and cut the sweet potatoes into 1-inch thick rounds.
Step 4: Slice each round into roughly 1-inch pieces. Cut the smaller rounds into quarters and the larger ones into sixths. Then, add the cubes to the middle of the baking sheet. Now, drizzle the pieces with oil and honey (if using), then season with salt and your preferred seasonings.
Step 5: Toss the sweet potatoes to coat them as evenly as you can, then spread them in one layer on the baking sheet. To nicely caramelized the potatoes, make sure they have enough space to roam around and turn them so the widest and flattest side is touching the sheet pan.
Step 6: Place the sheet pan in the preheated oven and toast the sweet potatoes for about 20 minutes. Take the sheet pan out of the oven and flip the potatoes using a big spatula, arranging the pieces back in one layer. Return to the oven and continue baking for another to 20 minutes or until fork-tender and the edges caramelized. Season the potatoes according to taste.
Step 7: Serve the roasted sweet potatoes warm or at room temperature. Enjoy!
Notes:
If desired, you can also mix the seasonings. You can try adding honey to spicy seasonings like chilli powder or chipotle chili powder to balance out the flavor.
Place the sweet potatoes in an airtight container and store them in the fridge for up to 5 days.
Arrange the sweet potatoes on a baking sheet and warm in a 350 degrees F oven.
You can also freeze the leftovers for up to 3 months. Just place them in an airtight freezer-safe storage container. When ready to serve, thaw in the fridge before reheating.
