Roasted Red Potatoes

These easy and elegant Roasted Red Potatoes are pretty easy to throw together. With only a few simple ingredients and steps, you’ll have this on your dinner table in no time! Red potato pieces coated in garlic, herbs, and parmesan cheese and baked to perfection! Perfect as an accompaniment to any meal, these crispy and flavorful potatoes is my number one favourite!

I always keep a huge bag of potatoes at home. They easy to prepare into something, inexpensive, nutritious, and they last long. And when roasted, they transform into this super flavorful dish!

INGREDIENTS

1 1/2 lbs baby red potatoes halved

1/4 c olive oil

2 tsp garlic minced

2 tsp salt

1/2 tsp pepper

1 tsp Italian seasoning

1/4 c finely grated parmesan cheese

2 tbsp chopped fresh parsley

cooking spray

How to make Roasted Red Potatoes

Step 1: Prepare the oven. Preheat it to 400 degrees.

Step 2: Use foil to line a sheet pan and cooking spray to coat the foil.

Step 3: In a large bowl, add the potatoes, olive oil, garlic, salt, pepper, Italian seasoning, and parmesan cheese. Toss to evenly coat the potatoes.

Step 4: In a single layer, spread the potatoes on the prepared baking sheet.

Step 5: Place inside the preheated oven. Bake for about 35 to 40 minutes or until golden brown and fork-tender.

Step 6: Before serving, sprinkle with parsley.

NOTE:

You can use large red potatoes slice into inch pieces.
