Roasted Green Beans and Potatoes

PREP TIME: 10 mins | COOK TIME: 40 mins | TOTAL TIME: 50 mins | SERVINGS: 4 servings

A simple and delicious side dish that goes perfectly well with any meal. With flavorful seasoning, these fresh green beans, roasted potatoes with garlic would be an excellent addition to your dinner table.

INGREDIENTS

Potatoes:

1 1/2 pounds of potatoes

2 tablespoons olive oil

1/3 teaspoon salt or to taste

1/2 teaspoon pepper

1/2 tablespoon paprika

1/2 tablespoon dried Italian herbs

Beans:

1 pound green beans, trimmed and cut in half

1/2 tablespoon olive oil

3 garlic cloves, minced

1/4 teaspoon salt or to taste

How to make Roasted Green Beans and Potatoes

Step 1: Peel and slice the potatoes into cubes. Transfer the cubed potatoes in a medium mixing bowl and mix with olive oil, salt, pepper, paprika, and Italian herbs.

Step 2: Place the potatoes on a baking sheet and evenly spread out. Bake in the oven for about 15 minutes at 400 degrees F.

Step 3: Meanwhile, add the green beans in the same bowl, then the olive oil, garlic, and salt. Toss to evenly coat the green beans.

Step 4: Remove the potatoes from the oven. Add on top the green beans and spread evenly.

Step 5: Place the pan back in the oven and bake for 25 minutes more.

NOTES:

Place these roasted green beans and potatoes in an airtight container and store in the fridge for up to 3 to 5 days.

To reheat, transfer the green beans and potatoes to a pan and drizzle with a bit more oil. Heat on the stove-top to your desired temperature. Stirring several times to evenly warm the dish.
