Roasted Green Beans and Potatoes

PREP TIME: 10 mins | COOK TIME: 40 mins | TOTAL TIME: 50 mins | SERVINGS: 4

My go-to for when I am running out of idea on what to serve with a meal. A simple side to add to your dinner table that goes so well with just about anything!

INGREDIENTS

Potatoes:

1 1/2 pounds of potatoes

2 tablespoons olive oil

1/3 teaspoon salt or to taste

1/2 teaspoon pepper

1/2 tablespoon paprika

1/2 tablespoon dried Italian herbs

Beans:

1 pound green beans, trimmed and cut in half

1/2 tablespoon olive oil

3 garlic cloves, minced

1/4 teaspoon salt or to taste

How to make Roasted Green Beans and Potatoes

Step 1: Peel and slice the potatoes into cubes. Transfer the cubes to a medium mixing bowl. Add in the olive oil, salt, pepper, paprika, and Italian herbs. Stir well to coat the potatoes.

Step 2: Evenly spread the potatoes on a baking sheet. Bake in a preheated 400 degrees F oven for about 15 minutes.

Step 3: In the meantime, place the green beans into the same bowl. Add in the olive oil, garlic, and salt. Stir to evenly coat the beans.

Step 4: Remove the potatoes from the oven, add the green beans on top, spreading evenly. Place back in the oven and bake for 25 minutes more.

STORE AND REHEAT:

1. Place the Roasted Green Beans and Potatoes in a storage container, tightly cover, and store in the fridge for up to 3 to 5 days.

2. To reheat, simply transfer them to a pan and drizzle with a little oil. Heat at your desired temperature on the stovetop, stirring a few times to evenly warm the potatoes and green beans.
