Roasted Cornish Hen

This Roasted Cornish Hen is freaking delicious! A set and forget type of dish that you can make and is perfect for any occasion. A juicy, tender cornish hen that is baked to perfection with veggies that are cooked alongside the chicken. An easy one-pan meal, hearty, and kinda fancy that undoubtedly will impress anybody!

I have never had a meal like this since Christmas! We only serve this Roasted Cornish Hen on Holidays, but today I feel like treating my family with something fancy. Unlike the usual sort of fancy meals I make, I want to make today special and nothing can perfectly define the word“special” than this impressively delicious and hearty Roasted Cornish Hen.

Ingredients

2 cornish hens about 1.5 lbs each

3 tbsp olive oil divided

½ tsp kosher salt or to taste

¼ tsp black pepper

½ tsp dried rosemary crushed

½ tsp lemon zest

¼ tsp thyme leaves

¼ tsp garlic powder

Optional Vegetables:

1 lb potatoes chopped

2 carrots chopped

1 onion chopped

How to make Roasted Cornish Hen

Step 1: Prepare the oven. Preheat it to 450 degrees F.

Step 2: In a tbsp olive oil, toss the vegetables and season with salt and pepper. You can add extra herbs if desired.

Step 3: In a small bowl, mix the rest of the 2 tbsp olive oil and herbs. Brush the hens with this, then twist the hen wings and tuck them under the bird.

Step 4: In a large casserole dish or rimmed baking sheet, transfer the hens, and around them, arrange the prepared vegetables. Put the baking sheet in the oven, adjust the heat to 400 degrees F, and bake for about 55 to 65 minutes until the vegetables are tender and the internal temperature of the hens registered 165 degrees F.

Step 5: Take the baking sheet out of the oven. Cover loosely with foil and let the hens sit for at least 10 minutes. With kitchen scissors, cut the hens in half and serve. Enjoy!
