3 to 4 pounds bone-in chicken parts
2 oranges, sliced
1 lemon, sliced
1 onion, diced
1 c. fresh orange juice
1/2 c. fresh lemon juice
1/4 c. olive oil
4 cloves garlic, minced
1/2 tablespoon dried oregano
1/2 teaspoon paprika
1/4 teaspoon red pepper flakes (optional)
2 to 3 fresh thyme sprigs
2 to 3 fresh rosemary sprigs
Sea salt and freshly ground black pepper
How to make Roasted Citrus And Herb Chicken
Step 1: Prepare the oven. Preheat it to 400 degrees.
Step 2: Combine the olive oil, garlic, orange juice, lemon juice, dried oregano, paprika, diced onion, red pepper flakes in a bowl. To taste, season with salt and pepper.
Step 3: into the bottom of a baking dish, place half each of the orange slices and lemon slices. On top, arrange the chicken and season to taste. And add the thyme, rosemary, and remaining orange and lemon slices over the chicken. Then, drizzle on the entire chicken the orange-lemon mixture.
Step 4: Bake in the preheated oven for about 45 to 60 minutes, uncovered.
