ricotta and spinach calzones

Ingredients

1 tbsp olive oil

1 large Egg, lightly beaten with 2 tablespoons water, plus 1 large egg yolk

10 oz. frozen chopped spinach, thawed and squeezed dry

4 oz. mozzarella cheese, shredded

8 oz. ricotta cheese

1 oz. Parmesan cheese, grated

1 tsp garlic powder

1 1/2 tsp minced fresh oregano

1 pound pizza dough

1 tsp salt

1/8 tsp red pepper flakes

How to make ricotta and spinach calzones

Step 1: Prepare the oven and preheat to 250 degrees C or 500 degrees F.

Step 2: In a large mixing bowl, add the ricotta cheese, mozzarella cheese, spinach, egg yolk, oil, oregano, red pepper flakes, salt, and garlic powder. Stir until well mixed.

Step 3: Sprinkle flour onto a flat surface, then place the dough on it. Slice into 4 equal parts.

Step 4: Flatten each dough with a rolling pin. Place them on parchment paper.

Step 5: Add 1/4 of the spinach over each dough and spread it evenly.

Step 6: Brush the sides of each dough with the egg wash. Fold each towards the spinach mixture, then press the sides to seal.

Step 7: Create 5 slits over each calzone to release the steam, then brush each with the egg wash again.

Step 8: Line with parchment paper a baking sheet.

Step 9: Arrange the calzones onto the prepared baking sheet.

Step 10: Place it inside the preheated oven and bake the calzones for about 8 minutes.

Step 11: Brush with the rest of the egg wash and sprinkle a generous amount of Parmesan cheese on top.

Step 12: Bake for 7 more minutes or until the cheese has melted completely.

Step 13: Remove from the oven and allow the calzones to rest for a few minutes at room temperature.

Step 14: Serve and enjoy!
