A deliciously filling meal made with only a few simple ingredients. If you haven’t tried Red Rice and Beans yet, this is honestly more than a good recipe to start. Hearty, delicious, and a complete meal.
INGREDIENTS
1/4 c extra virgin olive oil
1 medium onion diced
1 large bell pepper diced
2 garlic cloves minced
1 teaspoon ground cumin
1/4 teaspoon red pepper flakes or to taste
14.5 ounces 1 can diced tomatoes
2 c long-grain brown rice
4 c vegetable broth
16 ounces 1 can black beans, rinsed
1/4 c cilantro chopped
How to make Red Rice and Beans
Step 1: Heat olive oil in a large heavy-bottomed pot or skillet. Once hot, add the onion and saute for about 3 to 5 minutes.
Step 2: Add in the bell pepper and continue to cook for 3 to 4 minutes more.
Step 3: Stir in the garlic, cumin, and red pepper flakes. And cook for a minute more.
Step 4: Add the diced onion into the pot or skillet and cook further, stirring for another 5 minutes.
Step 5: Add the rice and pour in the veggie broth. Stir well and bring the mixture to a boil.
Step 6: Cover the pot with a tight lid. Adjust the heat to low and simmer for approximately 45 minutes or until the rice is completely cooked.
Step 7: Finally, add in the black beans and cilantro. Stir and allow to rest for at least 5 minutes before serving.
NOTE:
Adjust the cooking time depending on the variety of rice you use. For an accurate cooking time, follow the directions on the package.
