Ingredients
2 aubergines
2 green courgettes
1 yellow courgette
2 red Romano peppers
2 cloves garlic, minced
1 tablespoon olive oil, plus more for drizzling
1 teaspoon thyme leaves
1 tablespoon dried tomato pesto
250g jar tomato pasta sauce (arrabbiata etc.)
Salt and freshly ground black pepper
How to make Ratatouille
Step 1: Prepare the oven and preheat to 200 degrees C or 400 degrees F.
Step 2: Cut the veggies into thin slices.
Step 3: Place a saucepan on the stove and turn the heat to medium.
Step 4: Add the crushed garlic and sauté for about a minute or until aromatic.
Step 5: Add the pesto, thyme leaves, and pasta sauce. Cook for a few minutes.
Step 6: Transfer the mixture onto the bottom of a large round dish.
Step 7: Arrange the veggies in a circular form around the dish.
Step 8: Drizzle olive oil on top and sprinkle salt and pepper as well.
Step 9: Cover the dish with tin foil.
Step 10: Place the dish inside the preheated oven and bake for about 30 minutes.
Step 11: Remove the cover and bake for 15 to 20 minutes more or until the veggies are tender.
Step 12: Serve and enjoy!
