This casserole is done in one pot. Everything is layered and cook at the same time for that hot and satisfying meal that is perfect for feeding hungry stomachs. Serve this with a simple green salad for an easy and quick dinner.

2 c. sharp cheddar cheese
3 lbs potatoes, peeled and sliced (about 8 to 10 potatoes)
2 onions, sliced
1 can (10.75 oz.) condensed mushroom soup
2 tbsp fresh parsley, finely minced (optional)
1/2 c. milk
1/2 tsp garlic powder
1/2 tsp pepper
1/2 tsp salt
How to make Quick Crock Pot Meal of Cheesy Potato Ham Casserole
Step 1: On the largest holes of a box grater, grate the cheese. Thinly slice the onions using a chef’s knife. Into bite-size, pieces, dice the ham. After peeling the potatoes, cut them into about 1/4-inch thick pieces and place the pieces into a bowl with water to keep them from browning. Before layering the potatoes with the other ingredients, pat them dry first with paper towels. Lastly, mince the parsley.
Step 2: Place the diced ham, grated cheese, and sliced onions in a large mixing bowl. Combine using your hands or a rubber spatula.
Step 3: In the bottom of a slow cooker, put a layer of sliced potatoes. Top the slices with onion, then cheese, and the ham mixture. Do this until you’ve used all the ingredients.
Step 4: Into the same bowl you used for the onion, cheese, and ham, place the mushroom soup and milk. Season with salt, pepper, garlic salt, and parsley (reserve half tsp for later). Stir until smooth. Then, over the layered potatoes, ham, onions, and cheese, pour the milk mixture.
Step 5: Cover the Crock-Pot and cook for 4 hours on high.
Step 6: When the time is done, let the potatoes sit for at least 10 minutes after turning the pot off to give the juices time to soak into the potatoes further.
Step 7: To serve, ladle portions of the casserole on bowls of the plate. Enjoy!
Tips:
I always pick the classics because I am already familiar with them. Note that the quality of mushroom soup you use affects the finished casserole. Also, opt for low sodium mushroom soup since the cheese and ham already are quite salty. Or you can make a whole new flavour by using mushroom and roasted garlic soup. You can even use another condensed soup such as cream of onion.
I highly recommend getting a mandoline with a variety of attachable blades. You can use it to slice the potatoes and onions also shred the cheese. To prevent cuts when using a mandoline, make sure to wear safety gloves.
