2 chicken breasts cut in strips
1 tbsp olive oil
1/2 medium yellow onion chopped
1/2 bell pepper chopped
3 cloves of garlic minced
1/2 tsp EACH salt, pepper, & garlic powder
1 c marinara sauce
1/2 c mozzarella or Italian blend cheese
1/4 c Parmesan cheese optional
3 c cooked pasta 1.5 c dry pasta
How to make Quick and Easy 15 minute Chicken Pasta
Step 1: Add 2 cups of salted water in a medium saucepan and bring to a boil. Add in 1.5 cups uncooked pasta and a tsp salt. Cover the pan and let the pasta cook for about 10 minutes.
Step 2: Meanwhile, prepare the chicken breasts, onion, and bell peppers.
Step 3: In a heavy-duty pan or pot, heat a tbsp oil over medium-high heat. Once the oil is hot, saute the onion and bell peppers for a minute or two or until soft. Stir in the garlic and cook for 30 seconds more or until a bit golden.
Step 4: Add the chicken to the pan with salt, pepper, and garlic powder. Cook until the chicken is browned and almost done.
Step 5: Add in the marinara sauce, cover the pan, and let the mixture simmer for about 5 minutes.
Step 6: Drain the pasta and add to the chicken mixture. Mix well, then add in the cheese before turning the heat off.
Step 7: Broil the cheese if desired. Place in the oven and broil until the cheese is bubbly.
Step 8: Once done, sprinkle with Parmesan.
Step 9: Serve and enjoy!
