This crazy delicious quick and easy Chicken Pasta is my family’s new obsession. Ready in just fifteen minutes, the perfectly cooked pasta and juicy-tender chicken tossed in garlic tomato sauce and topped with mozzarella and Parmesan cheese sure is a nice way to wrap up your day. And the melted cheese makes you want to dig straight in!

2 chicken breasts cut into strips
1 tbsp olive oil
1/2 medium yellow onion chopped
1/2 bell pepper chopped
3 cloves of garlic minced
1/2 tsp EACH salt, pepper, & garlic powder
1 c. marinara sauce
1/2 c. mozzarella or Italian blend cheese
1/4 c. Parmesan cheese optional
3 c. cooked pasta 1.5 c. dry pasta
How to make Quick and Easy 15 minute Chicken Pasta
Step 1: Bring to a boil 2 cups of salted water in a medium saucepan. Add 1.5 cups of uncooked pasta with a tsp salt into the water. Cover the pan and cook the pasta for about 10 minutes.
Step 2: Meanwhile, ready the chicken breasts, onion, and bell peppers. In a heavy-duty pan or pot, heat a tbsp oil over medium-high heat. Once the oil is hot, add the onion and bell peppers to the pan and saute for about a minute or two until soft. Add in the garlic and saute for another 30 seconds until lightly golden. Finally, add the chicken, salt, pepper, and garlic powder, and cook until the chicken is brown and almost completely cooked.
Step 3: To the pan, add the marinara sauce and let it simmer for about 5 minutes, covered. The pasta is done by this time. Drain and transfer the pasta to the chicken mixture. Toss, then add the cheese. Turn the heat off. You can broil the cheese if desired until bubbly.
Step 4: Before serving, top the chicken pasta with Parmesan. Enjoy!
