2 chicken breasts cut into strips
1 tbsp olive oil
1/2 medium yellow onion chopped
1/2 bell pepper chopped
3 cloves of garlic minced
1/2 tsp EACH salt, pepper, & garlic powder
1 c. marinara sauce
1/2 c. mozzarella or Italian blend cheese
1/4 c. Parmesan cheese optional
3 c. cooked pasta 1.5 c. dry pasta
How to make Quick and Easy 15 minute Chicken Pasta
Step 1: Bring 2 cups of salted water to a boil in a medium saucepan. Add in 1.5 cups uncooked pasta and a tsp salt. Cook for about 10 minutes, covered.
Step 2: In the meantime, slice the chicken breasts, onion, and bell peppers.
Step 3: In a heavy-duty pan or pot, heat a tbsp oil over medium-high heat. Once the oil is hot, add the onion and bell peppers to the pot. Saute for about a minute or two until soft. Add and saute the garlic for another 30 seconds until lightly golden. Add in the chicken and season with salt, pepper, and garlic powder. Saute further until the chicken is brown and almost cooked through.
Step 4: Pour in the marinara sauce, cover the pan, and allow the sauce to simmer for about 5 minutes.
Step 5: Add the drained pasta to the pot, mixing well before adding in the cheese. Turn the heat off.
Step 6: Alternately, you can broil the cheese in the oven until bubbly instead of just letting it melt from the heat of the pan.
Step 7: Top the Chicken Pasta with Parmesan, serve, and enjoy!
