Quesarito

PREP TIME: 10 MINS | TOTAL TIME: 40 MINS | YIELDS: 4

This copycat of Taco Bell’s Quesarito is way better plus you can make this at the comfort of your home anytime. If you love burritos, I am pretty sure that you’ll dig this bad boy.

INGREDIENTS

BEEF:

1 pound ground beef

1 teaspoon chilli powder

1/2 teaspoon ground cumin

1/2 teaspoon smoked paprika

kosher salt

Freshly ground black pepper

CILANTRO-LIME RICE:

2 cups cooked white rice

1 tablespoon lime juice

2 tablespoons finely chopped cilantro

TO ASSEMBLE QUESARITO:

8 large flour tortillas

1 1/2 cups shredded Cheddar

1 cup Nacho Cheese Sauce

1/2 cup sour cream

How to make Quesarito

Step 1: Cook the beef in a medium skillet over medium-high heat. Add the chilli powder, cumin, and paprika, and season with salt and pepper. Cook for about 6 minutes or until the beef until not anymore pink. When done, drain excess fat.

Step 2: Place the white rice, lime juice, and cilantro in a medium bowl. With a fox, mix them well to make cilantro-lime rice and set aside.

Step 3: To make the quesadillas, heat over medium-high heat a large nonstick pan. Add the tortillas into the heated pan and sprinkle over the cheddar cheese. Top with another flour tortilla and continue to cook for about 2 minutes on each side until the cheese has melted. Do the same for the rest of the tortillas.

Step 4: To assemble, place one tortilla on a cutting board or plate and add some rice, meat, nacho cheese sauce, and sour cream on top. Roll the tortilla like a burrito. Do this for the rest.

Step 5: Cook two Quesaritos in a heated nonstick pan over medium-high heat for about 3 to 5 minutes on each side until golden and slightly crispy.

Step 6: Serve the Quesarito immediately.
