Quesadilla Cake

This is not your ordinary beef quesadilla. It’s five times the flavour with five layers of goodness that will make you go nuts!

Ingredients

1 tablespoon extra-virgin olive oil

Cooking spray

1 pound ground beef

1 large onion, chopped

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon chilli powder

2 tomatoes, chopped

2 tablespoons tomato paste

1 cup shredded cheddar

1 cup shredded Monterey jack

6 medium flour tortillas

Kosher salt

Freshly ground black pepper

TOPPINGS:

Pico de gallo

Fresh cilantro

Sour cream

How to make Quesadilla Cake

Step 1: Prepare the oven. Preheat it to 400 degrees. With cooking spray, grease an 8 to 9-inch springform pan.

Step 2: Heat the oil in a large skillet over medium heat. Once the oil is hot, add the onion and saute for approximately 5 minutes until soft. Add the garlic along with the spices and continue to cook for another minute until aromatic. Now, add the ground beef and cook for additional 6 minutes, breaking the meat apart using a wooden spoon until no longer pink. When done, drain the excess grease.

Step 3: To the skillet, place the beef mixture back and add the tomatoes and tomato paste. Stir and cook for about 2 minutes over medium heat. To taste, season with salt and pepper.

Step 4: On the bottom of the prepared springform pan, place the tortilla. Then, top with a layer of the beef mixture followed by a handful of the cheeses. Do the same layer five times, ending with cheese.

Step 5: Place in the preheated oven. Bake for about 20 minutes until the cheese has melted, and the tortillas are warmed through. Remove from the oven when done and allow the cake to cool in the pan for at least 5 minutes.

Step 6: Serve the quesadilla cake garnished with your favourite toppings. Slice and serve. Enjoy!
