Pumpkin Pecan Cobbler

Prep time: 10 mins | Cook time: 40 mins | Yield: 8 servings

I always love this Pumpkin Pecan Cobbler. It is a truly magical dessert that is much more than just a cobbler. The perfect cozy fall dessert alternative to pie. I love to serve this with extra sprinkles of pecans and a big scoop of vanilla ice cream for that ultimate treat that everyone will surely be begging for!

Ingredients

COBBLER:

1 1/2 tsp cinnamon

1 c. plus 3 tbsp flour

2 tsp baking powder

3/4 c. granulated sugar

1/2 tsp nutmeg

1/2 c. pumpkin puree

1/2 tsp cloves

1/4 c. whole milk

1/2 tsp salt

3 tsp vanilla

1/4 c. butter, melted

TOPPING:

1/4 c. chopped pecans

1/2 c. brown sugar

1 1/2 c. very hot water

1/2 c. granulated sugar

How to make Pumpkin Pecan Cobbler

Step 1: Prepare the oven. Preheat it to 350 degrees.

Step 2: In a medium-sized bowl, place the flour, baking powder, salt, sugar, cinnamon, nutmeg, and cloves. Mix well until combined and set aside.

Step 3: Place the pumpkin, milk, melted butter, and vanilla in a smaller bowl. Mix well until blended. Into the dry ingredients, add the wet ingredients, and mix well until you have a thick batter. Into an 8-inch casserole dish with high sides, pour the batter.

Step 4: For the topping, place the sugar, brown sugar, and pecans together in a separate bowl. Mix well until combined, then evenly spread this on top of the batter.

Step 5: Over the whole thing, pour the hot water. DO NOT STIR. Place the dish on a baking dish.

Step 6: Place in the preheated oven and bake for about 40 minutes or until the middle of the cobbler is set. Remove from the oven when done and let the cobbler cool for about 5 to 10 minutes.

Step 7: Serve the cobbler with extra pecans and a big scoop of vanilla ice cream. Enjoy!
