Pumpkin Cinnamon Bread

PREP TIME: 20 mins | COOK TIME: 1 hr | TOTAL TIME: 1 hr 20 mins | SERVINGS: 30

Beautiful and tasty pumpkin cinnamon bread to welcome Fall. Or make this into muffins and melt everyone’s heart!

INGREDIENTS

3 1/2 c all-purpose flour

1 1/2 tsp baking powder

1 tsp baking soda

1 tsp salt

2 tsp cinnamon

1/2 tsp nutmeg

1/2 tsp ground ginger

1/2 tsp ground cloves

2/3 c vegetable oil

2 c sugar

4 Eggs

1 tsp vanilla

15 ounces can pumpkin puree 1 can

1/2 c water

Streusel Topping:

1/2 c brown sugar

1/2 c all-purpose flour

2 tsp cinnamon

1/4 c Challenge unsalted butter melted

1/2 c chopped pecans or walnuts optional

How to make Pumpkin Cinnamon Bread

Step 1: Prepare the oven. Preheat it to 350 degrees F.

Step 2: Lightly grease 2 standard loaf pans and dust with flour.

Step 3: Add the flour, baking powder, baking soda, salt, and spices in a large bowl. Gently whisk and set aside.

Step 4: Place oil, sugar, eggs, vanilla, and pumpkin in a different large bowl and mix well. Pour in the water and mix until completely combined.

Step 5: Add the dry ingredients into the wet and slowly mix until just combined.

Step 6: Fill the prepared pans with the batter to about 2/3 full.

Step 7: To make the streusel, combine the brown sugar, flour, cinnamon, and if desired, nuts in a small bowl. Add in the melted butter and gently stir until incorporated with a few small lumps remaining.

Step 8: On top of the loaves, sprinkle the prepared cinnamon streusel topping.

Step 9: Place inside the preheated oven and bake for about 50 to 60 minutes or until a toothpick inserted in the middle of the bread comes out clean.

NOTE:

Make this recipe into muffins and bake for only 18 to 20 minutes.
