Pumpkin Bars with Cream Cheese Frosting

Simple dessert bars to welcome fall or to enjoy all year round. With a delightful cream cheese frosting, these moist pumpkin bars are the perfect fit for a crowd.

INGREDIENTS

1 15 ounces can pumpkin

2 Eggs

2 c flour

1 c sugar

1/2 c oil

1/4 teaspoon ground ginger

1/8 teaspoon ground cloves

1 teaspoon cinnamon

1 teaspoon vanilla

1/2 teaspoon salt

1 teaspoon baking powder

1/2 teaspoon baking soda

Frosting:

4 ounces cream cheese

3 tablespoons butter softened

1 teaspoon milk

1 teaspoon vanilla

1 c powdered sugar

How to make Pumpkin Bars with Cream Cheese Frosting

Step 1: Prepare the oven. Preheat it to 350 degrees F.

Step 2: using parchment paper, line a 9 x 9-inch pan and lightly grease with non-stick cooking spray. Set aside.

Step 3: Put the flour, sugar, ground ginger, baking soda, baking powder, salt, ground cloves, and cinnamon in a large bowl. Whisk until combined.

Step 4: And make a well in the middle of the dry ingredients.

Step 5: Place the eggs, vanilla, oil, and pumpkin in the bowl of a stand mixer. At medium speed, combine until light and fluffy. Then, gently stir until just mixed.

Step 6: Into the prepared pan, transfer the batter, and place inside the preheated oven. Bake for about 30 to 35 minutes or until a toothpick inserted in the middle of the bar comes out clean.

Step 7: When done, remove from the oven and onto a wire rack until completely cool.

Step 8: In the meantime, prepare the frosting. In a medium bowl, place the cream cheese and butter. Combine using an electric mixer until smooth. Add in the sugar and mix at low speed until incorporated. Lastly, stir in the vanilla and mix well. Add a bit of milk to help with the consistency.

Step 9: Once the cake has fully cooled, evenly spread the frosting on top.

Step 10: Before serving, cut the bar into any size you like.
