If you have a kid who loves shrimps, this easy recipe will positively blow you two away! This delicious prawn meal takes just minutes to make. It’s super filling with fried rice and medium-sized prawns.

2 c. cooked, basmati rice
2 tablespoons oil
5 fat cloves garlic, chopped finely
1 tablespoon ginger, chopped finely
1 green chilli, chopped finely
1 medium-size onion, finely chopped
1/2 Capsicum / Green Bell Pepper, chopped finely
1 teaspoon or to taste Soy Sauce
1 teaspoon or to taste Vinegar or Lemon Juice
Salt
1 teaspoon Sugar
1 tsp or to taste Black Pepper Powder
Spring Onion (a handful), finely chopped
Marinating Prawns:
12 medium-size Prawns
Salt, to taste
1 teaspoon Chilli Powder
1 teaspoon Vinegar or Lemon Juice
1 teaspoon Soy Sauce
How to make Prawn Fried Rice Recipe / Shrimp Fried Rice
Step 1: Prepare and cook the basmati rice. When done, set the rice aside. For best results, cook the rice a day ahead and just store the cooked rice in the fridge to use the next day.
Step 2: In a bowl, place the prawns. Add the marinating ingredients (salt, chilli powder, vinegar or lemon juice, and soy sauce). Mix well until the shrimps are coated, then set aside.
Step 3: In a wok or frying pan, heat the oil. Once hot, add the prawns to the pan and cook them until curled and cook through. This takes about 3 to 4 minutes. Take the prawns from the pan when done and set them aside.
Step 4: Add the onions along with the garlic, ginger, green chillies, and capsicum in the same pan. Saute the ingredients for about a minute. Add the soy sauce, vinegar, salt, sugar, and pepper. Then, add the cooked prawns and toss well. Add the rice and stir fry for another 2 minutes. Add a generous amount of spring onions and stir once.
Step 5: Serve the prawns fried rice hot. Enjoy!
Notes:
The key to perfect fried rice is cooking the rice. You want to make sure to cook the rice until fluffy. For best results, cook the rice a day ahead and just store it in the fridge and use it the next day.
To make sure the prawns will not be rubbery, do not overcook them.
Feel free to adjust the soy sauce, pepper, and vinegar according to your taste.
