1 lb (450 grams) gnocchi
4 strips of bacon
1 tbsp butter
2 shallots or 1 small red onion, minced
2 or 3 clover garlic, minced
1 tsp red chilli pepper flakes to taste, optional
1 tsp Italian seasoning
1/2 tsp salt and fresh cracked pepper
1 large tomato, diced
3/4 c. vegetable or chicken stock
1/2 c. heavy cream
1/2 c. Parmesan, grated
2 c. fresh spinach
1/4 c. basil leaves, for garnish
HOW TO MAKE POTATO GNOCCHI IN BACON SPINACH CREAM SAUCE
Step 1: Cook the gnocchi in a large pot of boiling water until they float to the surface. Immediately drain when done and keep aside, uncovered.
Step 2: Meanwhile, in a skillet, saute the bacon until crisp. Transfer to a plate and discard the excess grease, keeping only the brown bits.
Step 3: Saute the shallot or onion in the same skillet over medium heat. Add in the garlic and saute in a tbsp butter until aromatic. Then, add in the gnocchi and continue to cook gently for another 5 minutes until brown. Lightly season with Italian seasoning, salt, and pepper, and if using, red crushed chilli pepper.
Step 4: To the skillet, add in the diced tomato and cook for about a minute before stirring in the chicken or vegetable oil. Bring the mixture to a low boil and simmer for about a minute or two. Add in the cream along with the grated Parmesan and cook for another minute while stirring constantly until smooth.
Step 5: Now, add in the spinach and cook until wilted, then return the bacon to the skillet. Adjust the seasoning according to taste and garnish with basil leaves and more grated Parmesan. Serve immediately. Enjoy!
