This Potato and Onion Pie is incredibly easy to make using only simple ingredients or whatever is available. It’s an excellent side dish that pairs well with chicken and green salad. Not to mention, it smells fantastic you surely cannot be able to resist!

2 lbs of russet potatoes, peeled and sliced very thin
1 medium-size onion, peeled and cut in half, and sliced very thin
salt and pepper to taste (light on the pepper)
4 tsp of minced garlic
1 c. of grated cheese, divided
2/3 c. of sour cream, whipping cream, or milk (I use a combination of all three!)
1/4 c. Parmesan grated fresh

How to make Potato and Onion Pie
Step 1: Prepare the oven. Preheat it to 375 degrees. And using Pam, grease a 10-inch glass pie dish.
Step 2: On to the bottom of the prepared pie dish, scatter 2 tsp of garlic. On top, place half of the sliced potatoes, overlapping the pieces, then add half of the slices of onion over. Season with salt and pepper and evenly sprinkle with 1/3 cup of your choice of cheese. Make another layer of garlic, potatoes, onions, and salt, pepper. On top, evenly add the milk mixture followed by the rest of the 2/3 cup of cheese and 1/4 cup of Parmesan cheese.
Step 3: Tent the pie with foil and place it in the preheated oven. Bake for about 30 minutes. Remove the cover and resume baking for another 30 minutes. To brown the top, broil the pie.
Step 4: When done, slice into wedges and serve. Enjoy!
Tip:
For this recipe, I use jack cheese, fontina, gruyere cheese, cheddar. I also like fontina and jack cheese.
To make the milk mixture, mix the sour cream with heavy cream and 2% milk. Alternately, you can use milk, all cream, or a combination of both. Or use whatever you like. Feel free to experiment!
