Ingredients
2 1-lb pork tenderloins, trimmed
1/4 c. hoisin sauce
1 lb green beans, stems trimmed
1 1/2 lbs baby potatoes cut in half lengthwise
3 tbsp olive oil
kosher salt and freshly ground pepper
4 tbsp butter softened
2 tbsp freshly minced chives
1 garlic clove minced into a paste
nonstick cooking spray
How to make Pork Tenderloin
Step 1: To the middle-lower position, adjust the oven rack, then preheat the oven to 450 degrees.
Step 2: With nonstick cooking spray, grease a heavy-duty baking sheet.
Step 3: Combine the green beans, a tbsp olive oil, 1/4 tsp each kosher salt, and freshly ground pepper in a large bowl. Then, in the middle of the prepared baking sheet, arrange the green beans.
Step 4: Toss the potatoes with 2 tbsp olive oil, 1/4 tsp kosher salt, and 1/4 tsp freshly ground pepper in the same bowl. Arrange the potatoes cut-side down on either side of the green beans.
Step 5: Over the green beans, lay the tenderloins, making sure they are not touching. Then, brush with hoisin sauce and lightly season with salt and pepper.
Step 6: Place in the preheated oven and roast for about 20 to 25 minutes until the internal temperature of the thickest part of the tenderloins reads 140 degrees.
Step 7: Meanwhile, mix well the butter, chives, garlic, 1/4 each of salt and pepper.
Step 8: Remove the sheet pan from the oven once the tenderloins are done cooking. Then with a tbsp of garlic herb butter, top each tenderloin. Allow the tenderloins to rest for a few minutes before slicing.
Step 9: Before serving, top the potatoes and green beans with the rest of the tbsp garlic herb butter. Enjoy!
