Perfectly seasoned and pan-fried pork chops, then smothered in a simple gravy. Pair these juicy and flavorful pork chops with mashed potatoes, roasted carrots, or green beans for an easy and quick weeknight dinner.

Pork Chops:
3 tbsp olive oil
4 pork chops, see notes
¼ c. flour
½ teaspoon onion powder
½ teaspoon garlic powder
¼ teaspoon paprika
Salt, to taste
Gravy:
4 tbsp Butter
2 c. chicken broth
1 beef bouillon cube or 1 teaspoon better than bouillon
1 tsp low sodium soy sauce, can sub Worcestershire sauce
1 tsp garlic powder
1 tsp onion powder
¼ tsp dried thyme
¼ tsp dried sage
¼ tsp dried rosemary
4 tbsp Flour
1/3 c. half and half
2-3 drops Kitchen Bouquet, optional
How to make Pork Chops in Gravy (Smothered Pork Chops)
Step 1: With salt, sprinkle all sides of the pork chops. Set aside for about 30 minutes or so. If desired, you can tent the pork with saran wrap and pound using a meat tenderizer.
Step 2: On a plate, mix the flour, garlic powder, onion powder, and paprika until well combined.
Step 3: For the gravy, whisk the chicken broth, beef bouillon, soy sauce, and seasonings. Set aside.
Step 4: Pat the pork chops dry, then dredge in the flour mixture just before frying.
Step 5: In a large pan, heat the olive oil over medium-high heat. Once hot, add the 2 pork chops at a time and sear for about 2 minutes on each side until golden. As needed, add a splash of olive oil or lower the heat. When done, set the chops aside.
Step 6: Leave only the brown “fond” in the pan and remove any black remnants. Add the butter and melt it over medium heat. Once melted, whisk in the flour for about 2 minutes or until you can no longer smell the flour. Then, slowly pour in the chicken broth followed by the half-and-half. Keep stirring until incorporated.
Step 7: Bring the mixture to a gentle bubble, then decrease the heat to a simmer while stirring. To darken the gravy, you can add about 2 to 3 cups of Kitchen Bouquet (optional).
Step 8: Adjust the heat to medium-low. Return the chops to the skillet and spoon the sauce on top. Put the lid on and cook the chops for about 10 minutes, flipping them halfway through.
Step 9: Turn the heat off but leave the lid on and allow the chops to rest for about 5 minutes in the skillet.
Step 10: Serve the pork chops warm with mashed potatoes, roasted carrots, or green beans. Enjoy!
