2 tablespoons brown sugar
¼ cup extra virgin olive oil
¼ cup reduced-sodium soy sauce
2 tablespoons Worcestershire sauce
1 teaspoon salt
½ teaspoon ground black pepper
3 cloves garlic minced
4 bone-in pork chops
How to make Pork Chop Marinade
Step 1: Place all the ingredients in a small bowl except for the pork chops. Whisk until well combined.
Step 2: To a resealable zip lock bag or large bowl, add the pork chops and pour over the marinade. Before sealing the bag, squeeze as much air as you can. Let the pork chops marinate for at least 2 hours or overnight.
Step 3: Ready the grill or grill pan. Preheat to medium heat. Place the pork chops on the preheated grill or pan, discarding the rest of the marinade. Grill each side for about 4 to 5 minutes over medium heat until a meat thermometer inserted in the centre of the meat reads 145 degrees F. Take the chops from the grill and let them rest for at least 3 to 5 minutes before serving.
NOTES:
You can freeze the uncooked pork in the bag with the marinade. When ready to cook, thaw in the fridge completely and grill as instructed.
The addition of soy sauce in this recipe acts as a brine and guarantees that the pork will be flavorful and juicy.
You can marinate the pork chops for at least an hour but, I prefer marinating them for 8 hours up to 24 hours.
For safety food concerns, discard the pork chops if they are already sitting in the marinade for five days.
The suggested internal temperature of pork is at least 145 degrees F with a resting time of three minutes after cooking.
