PORCUPINE MEATBALLS

PREP TIME: 15 mins | COOK TIME: 60 mins | TOTAL TIME: 75 mins | YIELD: 30 Meatballs

Made with ground beef, rice, and spices, these Porcupine Meatballs give a fun twist to the traditional meatballs. Cooked with easy homemade red sauce, these babies have all it takes!

INGREDIENTS

15 oz tomato sauce

1 c. water, divided

2 tbsp light brown sugar

2 tsp Worcestershire sauce

1/2 c. long-grain white rice, uncooked

1/3 c. chopped onion

1 tsp salt

1/2 tsp garlic powder

1/2 tsp black pepper

1/4 tsp paprika

1 lb lean ground beef

2 tbsp canola oil

1 tbsp parsley chopped (for garnish, optional)

HOW TO MAKE PORCUPINE MEATBALLS

Step 1: Prepare the oven. Preheat it to 350 degrees F.

Step 2: Combine the tomato sauce, half a cup of water, brown sugar, and Worcestershire sauce in a medium bowl until the sugar is completely dissolved. Set aside.

Step 3: Add the rice, half a cup of water, onion, salt, garlic powder, black pepper, and paprika in a large bowl. Mix the ingredients with a spatula until combined.

Step 4: To the rice mixture, add the ground beef and canola oil. Thoroughly mix until the beef has broken and everything is combined.

Step 5: Scoop out 1 to 2 tbsp of the meat mixture using a spoon and roll to make a ball. In a 9 x 13-inch baking dish, place the formed ball and do the same for the rest of the meat mixture. Make sure to place the balls in the dish at least an inch apart.

Step 6: Over the meatballs, pour the prepared red sauce. Gently shake to distribute the sauce.

Step 7: Use foil to tent the baking dish. Place inside the preheated oven and bake for about 30 minutes. Uncover and bake for 30 to 35 minutes more or until the meatballs are cooked through.

Step 8: Remove from the oven and serve the meatballs immediately. Garnish with chopped parsley. Enjoy!
