Polish Kielbasa and Cabbage Soup

by Rebecca February 22, 2021

Prep time: 10 mins | Cook time: 30 mins | Serves: 8 cups

Easy and quick soup made with kielbasa, onions, cabbage, potatoes, and vegetable stock. A no-fuss, super simple Polish Kielbasa and Cabbage Soup that you can fix in only thirty minutes. A nice way to feel cosy on cold days without throwing so much effort.

I love kielbasa no matter how it is fixed. It’s one of the many reasons I love and enjoy this dish. And I like a bit of a kick so I add in a little hot sauce in this. Sure this traditional Eastern European soup is healthy and delicious in a bowl! Originally made sauerkraut, this amazing soup is comforting in every way. This is also perfect to make ahead. Just store this in the fridge (for up to 4 days) and reheat. Feel free to add carrots, celery, and more kielbasa and cabbage for a one-packed soup! Enjoy every sip and gulp!

Ingredients

1 pound Polish kielbasa, sliced in 1/4-inch in rounds

2 cups onions, sliced thinly

4 cups green cabbage, shredded

1 tablespoon fresh garlic, minced

6 cups vegetable stock

2 cups potatoes, peeled and diced

1 teaspoon salt

1/2 teaspoon pepper

How to make Polish Kielbasa and Cabbage Soup

Step 1: In a large soup pot, saute the kielbasa over medium heat for about 5 minutes.

Step 2: Once cooked, remove the kielbasa from the pot and set it aside.

Step 3: Into the same pot, add the onion and cabbage. Saute for about 10 minutes.

Step 4: Add in the garlic and cook for another 2 minutes, stirring constantly.

Step 5: Pour in the vegetable stock, then add in the potatoes. To taste, season with salt and pepper.

Step 6: Bring the mixture to a boil, then simmer for approximately 20 minutes.
